玉米（學名：Zea mays），亦稱玉蜀黍、包穀、苞米、棒子；粵語稱為粟米，閩南語稱作番麥，閩東平話稱為番豆或苞蘿（意義略有差異），晉語稱玉茭子、玉稻黍等，在馬來西亞華人地區被普遍稱為包粟，是一年生禾本科草本植物，也是全世界總產量最高的糧食作物。
原產於中美洲，是印地安人培育的主要糧食作物，原本是體型很小的草，喜高溫，經美洲原住民培育多代後才出現較大型的玉米。16世紀時傳入中國，明朝嘉靖三十九年（1560年）成書的《平涼府志》記錄了玉米，當時稱作「番麥」和「西天麥」。在原產地美洲以外，中國是玉米種植最為普及的地區。玉米也是全世界總產量最高的糧食作物。
玉米不脫粒就可以直接蒸、煮、烤食用。脫粒後通常加工成麵粉，如果經加工口味不錯。但以前為了增加產量，常和種皮一起磨粉，叫做「棒子麵」，非常粗糙，難以下咽，但抗飢餓，是低收入人們的主要糧食。隨著經濟水平的提高，現在只有精加工的玉米粉作為調劑口味用。

玉米主要用於作為飼料，工業生產澱粉、發酵類藥品的主要原料。

玉米胚芽可以提煉玉米油，長期食用在預防心血管疾病方面優於花生油，不及橄欖油。剛成型的一寸來長的玉米芯可直接當作蔬菜烹調，口感類似筍。煮熟的玉米粒是沙拉常用的材料，或做粟米羹，或直接食用。墨西哥人常用一種大型的玉米粒和肉類烹調湯類食物「潑佐肋」（pozole）。

玉米莖粗壯高大，葉寬大，以前也是平原地區農民的重要燃料來源。
玉米的根為鬚根系，除胚根外，還從莖節上長出節根：從地下節根長出的稱為地下節根，一般4~7層；從地上莖節長出的節根又稱支持根、氣生根，一般2~3層。株高1~4.5米，稈呈圓筒形。全株一般有葉15~22片，葉身寬而長，葉緣常呈波浪形。花為單性，雌雄同株。雄花生於植株的頂端，為圓錐花序；雌花生於植株中部的葉腋內，為肉穗花序。雄穗開花一般比雌花吐絲早3~5天。

Health risks
Popcorn is included on the list of foods that the American Academy of Pediatrics recommends not serving to children under four, because of the risk of choking.[23] Special "hulless" popcorn has been developed that offers an alternative for small children and for people with braces or other dental problems who may otherwise need to avoid popcorn.
Microwaveable popcorn represents a special case, since it is designed to be cooked along with its various flavoring agents. One of these common artificial-butter flavorants, diacetyl, has been implicated in causing respiratory ailments.[24]
